A first-time showcase, we're rather excited to present El Pajal from Guatemala. Produced by Domingo Lopez in San Antonio Huista, Huehuetenango; Domingo is a member of the ACODIHUE Coop Union, the same overarching organisation from which we purchase some of our core Guatemalan coffees such as Red de Mujeres and Todos Santos. Growing Caturra, Catuai, Bourbon and Pache, Domingo has been preserving his pure Arabica varieties to maintain a high cup quality. Certified organic, Domingo's farm management practices mean that coffee leaf rust doesn't affect his plants. With much of our Guatemala offering focused around the Huehuetenango region, it's needless to say how much we enjoy coffee from the area, and El Pajal ticks all the boxes. Juicy, zesty, sweet, syrupy, balanced and plain delicious, El Pajal brims with tasty delight for a welcome start to the day.
